Oatmeal Bars

These healthy granola bars are nutritionally balanced and so easy to make. Made from oatmeal, nuts, seeds and whey protein, they are so filling thanks to the balance of complex carbs, proteins, fibre and healthy fats. They are perfect for on-the-go breakfast or as a workout snack.

I had been meaning to create my own version of granola bars for a while. Let’s face it, between preparing kids’ breakfast and lunches in the morning, there’s hardly any time left for me to prepare and eat a healthy breakfast.So I decided to come up with a nutritionally balanced granola bar recipe which had proteins, complex carbs and healthy fats that I could prepare in advance and keep it handy in my freezer.  I now have these every morning with a cup of green tea with lemon. Here’s the recipe. Hope you like it as much as I do.

 

Home-made Granola Bars

Ingredients

  • 2 Cups oatmeal
  • 4 tbs of butter
  • 2 tbs coconut oil
  • Pinch of salt
  • 1 tsp Vanilla essence
  • 1 Cup unsweetened applesauce
  • 1/2 Cup of Pure Maple syrup
  • 3 scoops of protein powder
  • 1/4 cup slivered almonds,
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped apricots
  • 1/4 cup hemp seeds
  • 1/8 cup pumpkin seeds
  • 1/8 cup sunflower seeds

Instructions

  1. Mix oatmeal, butter and salt and put it in the oven at 350 degrees. Check after 10 -15 min and mix it around a little bit to make sure the corners don't burn. Leave it for another 15 min or until its toasted and fragrant.
  2. Mix maple syrup, applesauce and coconut oil and heat it for a few minutes to thicken the liquid. Add vanilla essence and take it off the stove.
  3. Let the oatmeal cool down for a few minutes and then mix the protein powder, nuts and seeds. Add the dry ingredients into the liquid and mix well. Line a 9 by 9 pan and put the oatmeal mixture into it, press it down to create a smooth layer. Freeze, cut when it's hard.
