Thai Green Chicken Curry

Thai Green Curry


This Thai Green Chicken curry features chunks of tender chicken with homemade green curry sauce along with healthy vegetables. If you prefer, you can also make it with seafood (with shrimps or fish) or create a completely vegetarian version. Enjoy this aromatic curry with it plain white rice.


100 G             Chicken, sliced into thin strips

1 Tbs              Green curry paste

1Tbs               Cooking oil

1                      Thai eggplant

10 G                Pea eggplant

½ Cup           Coconut cream

½ Cup           Coconut milk

2                      Kaffir leaves, torn in half

10 leaves        Sweet basil

5 G                  Ginger, cut in thin strips

½ Tsp            Coconut Palm sugar

1 Tsp              Fish sauce


  1. Put oil in wok and add 1 Tbs of green curry paste, stir vigorously until its fragrant and leaves oil.
  2. Add coconut cream, continue stirring until the oil separates again.
  3. Add chicken and fry for a couple of minutes
  4. Add coconut milk, eggplants, kaffir leaves, sugar and fish sauce. Stir constantly until the chicken is cooked.
  5. Finally add sweet basil and cook for 20 seconds.
  6. Serve and enjoy with white rice.
