Wholesome Super-food cereal

A few months ago I came across a cereal called Holy Crap at a local health food store. I had never heard of this brand before but what intrigued me was that it was gluten free, organic, high in fibre and source of Omega 3 & 6 fats. It had also won the first prize on a Canadian TV show called Dragon’s Den, where entrepreneurs pitch their business ideas to tough-minded investors to secure business financing.

Ok….so the name had my attention but I wasn’t going to pay $11.99 for a tiny 8 oz. bag (8 servings, 2 Tb each)…or was I? Well, I actually ended up buying this really expensive super-food cereal, mentally promising myself that I just needed to try it once, surely I can re-create my own version right at home.

True to my promise, I have since then tried several different versions of this cereal at home, until settling down with my latest recipe. I generally make it once a week and store it in an airtight mason jar to keep it fresh. I have altered the recipe a little bit by replacing calorie dense buckwheat with oatmeal. Although if you prefer gluten free, keep the buckwheat. I also add unsweetened cacao nibs due to its high anti-oxidant content. Feel free to experiment with the ingredients to make your own favorite recipe.

 

Wholesome Super-food cereal

Ingredients

  • 3 Cups - Oatmeal
  • 1/4 Cup - Macadamia nuts
  • 3 Tb - Ground chia seeds (heaped tablespoons)
  • 3 Tb - Hemp seeds
  • 4 Tb -Pumpkin seeds
  • 3 Tb - Slivered almonds
  • 5 Tb - Goji berries
  • Or 10 - dried apricots chopped into smaller pieces
  • 2 Tb - Unsweetened chocolates nibs
  • 4 Tb - Coconut Oil
  • 1 tsp – Cinnamon

Instructions

  1. Heat oven to 350C. Line baking tray and set aside. Melt oil and mix oatmeal well. Spread evenly in the baking tray and place it in the oven for 20 minutes, stirring regularly to prevent burning. Once toasted pull the tray out and allow it to cool completely. Add the remaining ingredients and mix well. Store in an airtight jar.
  2. To Serve
  3. 4 Tbs - Cereal
  4. ½ to 1 cup - Almond Milk
  5. Stevia/Xylitol/Raw Honey - Optional
  6. Enjoy!!
    Note: You can toast oatmeal easily in a pan as well. Additionally, if you like you can toast slivered almonds and pumpkin seeds with the oatmeal to add the extra crunch.
